These beautiful red daikons are red on the inside and out. The red hue comes from anthocyanin, just as it does for blueberries and purple vegetables.
The red daikons generally tend to be sweeter than regular white daikons. Thus, it is great for salads (to add color as well) and eaten raw, but of course can be enjoyed cooked as well.
