Shape may be oblong like May Queen (standard) potatoes but has a beautiful dark purple hue from anthocyanin, the same pigment as that of blueberries.
The texture of Shadow Queens can be described as between standard potatoes and sweet potatoes, and is good for use in various potato dishes. The purple hue stays even when it is cooked, so you can enjoy purple soups, mash, potato salads, french fries.
メークインと同じ長い卵型をしていますが一番の特長はその色。外側は黑っぽく中身は鮮やかな紫色をしています。この紫色は、ブルーベリーでもおなじみの色素「アントシアニン」によるものなんです。
メークインより粘りが少なくじゃゃがいもとさつまいもの中間ぐらいです。味は一般的なじゃがいもなので、いろいろなじゃがいも料理に使うことができます。加熱しても鮮やかな紫なので、彩りを生かしたポテトサラダやビジソワーズ・ポテトフライなどがおすすめです。
