SPECIALTY POTATOES
Often craved for by chefs for their small size and delicate addition to a dish.
Incan Awakening, also known as "Mezame" potatoes are usually quite small and petite in size and are elongated, oblong, and spherical in shape, averaging only two ounces in weight.
Originated in Hokkaido, smooth golden-brown skin contains a few, shallow eyes and there are bumps and indentations across the surface creating a lopsided texture. The flesh is deep yellow and firm, dense, viscous, and moist. Mezame potatoes offer a nutty, sweet, and creamy taste similar to that of chestnuts and sweet potatoes.

小ぶりで丸みがあり、まるで栗や薩摩芋のうような甘みがある事で知られる「インカの目覚め」。春先から初夏に収穫される。
高級レストランなどで好まれる、小さくで甘いじゃが芋。
